- Description: The main objective of the current study was to determine the effect of distance travelled (DT), lairage duration (LDhr) and animal-related factors (animal class, breed, sex) on pre-slaughter stress indicators, carcass characteristics, nanostructure and technological properties of beef. The study was conducted in an Eastern Cape abattoir under the Buffalo City District Municipality. Six genotypes of cattle (Beefmaster, Bonsmara, Brahman, Holstein-Friesian, Non-descript and Nguni) brought for slaughter at the abattoir on different days were used in the study. Slaughter weight (SWT), warm and cold carcass weight (WCW and CCW), fatness and conformation of each animal were measured and recorded. Representative samples of blood plasma and meat quality from the Muscularis thoracis et lumborum (LTL) were collected at slaughter and 24 hours after slaughter, respectively. Heat shock proteins 70kDa (HSPA1A), glucose (GLU), cortisol (CORT), creatine kinase (CK) and lactate dehydrogenase (LDH) were determined from the blood plasma. The representative LTL muscle was used to determine ultimate pH (pHu), lightness (L*), redness (a*), yellowness (b*), meat temperature (Tm), Warner Bratzler Shear Force (WBSF) and histological structure of beef. There were significant effects of distance on pHu, Tm, a*, b*, TL%, CK and LDH. Pearson correlations were observed between distance travelled (DT), creatine kinase (CK), lactate dehydrogenase (LDH), ultimate pH (pHu), colour coordinates (L*, a* and b*) and Warner Bratzler Shear Force (WBSF). Principal component analysis (PCA) revealed that the 1st (pHu), 2nd (Tm) and 3rd (L*) principal components were the critical meat quality attributes. Positive relationships between carcass weights and beef quality characteristics for bovine cattle where the cumulative percentage of the first six principal component`s (PC`s) (SWT, WCW, CCW, DP, pHu and Tm contributed to 93.4 % of the total variance. Significant correlation coefficients between DT (r = 0.15), LDhr (r = 0.29), Ta (r = -0.52), Tm (r = 0.26), L* (r = 0.33), a* (r = 0.32) and WBSF (r = -0.49) were observed. Meat from Brahman (BR), Non-descript (ND) and Nguni (NG) cows had visible skeletal muscle fibres which were thin and long indicating improved tenderness of beef. Exposing animals to longer hours of transportation did not only reduce glucose levels but also increased the expression of HSPA1A and levels of cortisol. The CK and LDH were not related to beef quality. Therefore, CK and LDH can be used as indicators of animal welfare in slaughter cattle but cannot be used to predict the quality of meat. Bulls were the heaviest, although heifers had the highest dressing percentage than cows. Furthermore, the nanostructure of beef indicated that heifers had the best muscle fibres, sarcomere length and visible intercalated discs. The observed nanostructures of Nguni genotype are an indication of tender meat. Beef from heifers of Nguni had visible and tender meat with traces of intramuscular fat while males had shorter sarcomere length and tougher meat.

Alternative methods used by small-holder farmers to control ticks and bovine dermatophilosis and the impact of a changing interface of Amblyomma ticks on dermatophilosis in Zimbabwe

- Description: This study was carried out to document the ethno-veterinary plants and non-plant remedies that farmers used to control dermatophilosis and ticks, and validate these in vitro and in vivo, as well as determine how the interface of Amblyomma variegatum and A. hebraeum affected the epidemiology of bovine dermatophilosis at selected small-holder areas in North-West Zimbabwe. A structured questionnaire survey was used to collect information on the control methods used by farmers for the control of bovine dermatophilosis and ticks. A total of 39 plants were used by farmers for various diseases, eleven of these plants were used for the control of dermatophilosis while three were for tick control. Across the study sites, dermatophilosis was controlled using eleven plants. Among these plants; six plants; Cissus quadrangularis, Catunaregan spinosa, Pterocarpus angolensis Carica papaya, Manihot esculenta and Blumea decurrens which were frequently used were selected for further studies. In vitro and in vivo studies were conducted to validate the efficacy of these plants. The minimum inhibitory concentration and bactericidal concentration assays were used for the in vitro validation of C. quadrangularis, C. spinosa and P. angolensis. Dermatophilus congolensis was more sensitive to P. angolensis average MIC = 0.63 mg/ml than to C. quadrangularis average MIC = iii 1.25 mg/ml and C. spinosa average MIC = 2.08 mg/ml. Cissus quadrangularis was selected for in vivo studies as this plant was the one most frequently used by farmers. Its therapeutic efficacy was compared to conventional antibiotics that farmers used to treat dermatophilosis infection. In the in vivo trials C. quadrangularis did not lead to appreciable reduction in clinical disease compared to the conventional drugs. The larval packet assay was the in vitro assay used to validate the efficacy of Carica papaya, Manihot esculenta and Blumea decurrens against larvae of A. hebraeum and Rhipicephalus appendiculatus. Manihot esculenta at 20 % w/v exhibited the highest larvicidal activity against R. appendiculatus. In the in vivo study, efficacy of the plants were investigated on naturally tick-infested cattle. Mannihot esculenta exhibited the largest tick load reduction compared to the other two plants but its performance was lower than that of conventional acaricides. The effect of A. variegatum and A. hebraeum on bovine dermatophilosis was investigated by evaluating how the presence or absence of these ticks and other herd level risk factors predicted clinical dermatophilosis and its prevalence at herd level. A structured questionnaire survey was carried out to collect data on potential risk factors. At the same time, cattle were physically examined for the presence of bovine dermatophilosis, according to a pre-defined case definition, and presence or absence of Amblyomma ticks was also recorded. The multivariable binary logistic model was developed with disease status as outcome, tick presence and infestion and herd level risk factors as predictors. Of the herds examined clinical bovine dermatophilosis was detected in 45% (84/185; 95% CI: 38.2, 52.6%) of them. Herds infested with Amblyomma variegatum were associated with higher odds (OR= 6.8; iv 95% CI: 1.71, 27.10) of clinical dermatophilosis while the association was not significant (P > 0.05) in A. hebraeum infested herds. It was concluded that management practices aimed at movement and tick control would help reduce the prevalence of clinical dermatophilosis in herds.

- Description: Sheep farming is practiced extensively in South Africa for its significant contributions to the livestock, wool and meat industries. The sheep farming sector in the country has approximately 13,800 farmers with commercial and communal sheep farmers making up 58 percent and 42 percent of the entire work force (Directorate of Agricultural Information Services, 2008). An estimate of 28.8 million sheep and flock size ranging between ≤ 50 and ≥ 1800 exist in various South African provinces. Although the national herd size is unevenly distributed provincially most of the herds are found in the Eastern Cape (30 percent) followed by the Northern Cape (25 percent), Free State (20 percent) and the Western Cape (11 percent) respectively (Agriculture, Forestry and Fisheries, 2011). Over twenty indigenous and locally developed sheep breeds are managed where about 69 percent of the land area is available for their grazing nation-wide (Campher et al., 1998; Palmer and Ainslie, 2006). Common among the indigenous breeds are the Afrikaner, Blackhead Persian, Blackhead Speckled Persian, Blinkhaar Ronderib, Damara, Karakul, Namaqua Afrikaner, Pedi, Redhead Persian, Redhead Speckled, Swazi and Zulu. The locally developed breeds include Dorper, Van Rooy and Merinos. The local breeds developed from Merinos consist of the Afrino, Dormer, Dohne Merino and South African mutton Merino (Hammond, 2000; Pranisha, 2004; Hinton, 2006; Sorma et al., 2012). All these sheep breeds are best suited for providing by-products such as wool, meat, hide, milk or a combination of products (Dave and Meadowcroft, 1996; Jensen, 2009). The indigenous and locally developed sheep were bred to meet the growing demand for its by-products (Peters et al., 2010). Expectedly, sheep farmers therefore, make use of the products from these sheep as a means of livelihood and sustenance of a viable local society (Cloete and Olivier, 2010).

- Description: This study was designed was to determine the effects of additive supplementation of Moringa oleifera leaf meal on growth performance, digestibility, digestive organ size, intestinal integrity, bone ash content and bone breaking strength, as well as meat yield and quality of broiler chickens. A total of 2400 day-old unsexed Cobb-500 broiler chicks were randomly allocated to 5 treatment groups: T1, positive control, 668 g/ton Salinomycin and 500 g/ton Albac; T2, T3 and T4 contained graded levels of MOLM at 1 percent, 3 percent and 5 percent of dry matter (DM) intake, respectively; and T5, a negative control (0 percent additives) in a complete randomized design experiment. Except for week one, FI and FCR was highest (P < 0.05) in T4 birds; while T1 birds had the highest FI in the period of 22 to 27d (P < 0.05). Throughout the production period, birds supplemented with MOLM had the highest BW (P < 0.05) than the birds fed the control diets. Feed intake (FI) and feed conversion ratio (FCR) among treatments was highest (P < 0.05) in T4 birds during the period of 8 to 14 d; and was highest (P < 0.05) for T1 birds in the period of 22 to 27d. Protein efficiency ratio (PER) and energy utilization efficiency (EEU) ratios were statistically significant among treatments (P < 0.05). However, dietary treatments had no effect (P > 0.05) on the weights of the heart, liver, spleen, or the gizzard, although the bursa for T2 birds was the lightest (P < 0.05); while gizzard erosion score was highest in T2 birds. All of the nutrients measured, except for fat, had negative intercepts that were significantly different (P < 0.05) from zero, indicating the presence of endogenous fecal losses. Tibiae length (TL) was highest in T2. The dried defatted weight (DW) was heaviest (P < 0.05) for T3 (11.20 ± 0.347) and T5 (11.08 ± 0.328). A positive correlation (r = 0.667; P < 0.01) between TW and DW was observed. There were no dietary effects on bone breaking strength (BBS), but T1 tibiae had highest resistance to breaking force (T1 > T4 > T3 > T2 > T5). Calcium was highest (P < 0.05) in T1; and lowest inT2 and T5. Phosphorus levels were lowest (P < 0.05) in T1; and highest (P < 0.05) in T5 compared. The highest Ca: P ratio was obtained in T4 (P < 0.05); while the ash percent was highest (P < 0.05) in T1. Drip loss increased as L* values increased; and a negative correlation was observed between L* and pH. On D1, C18: 0 and C22 in T2, while C15:0 was highest in T4. On D1, C20:2, C20:3n6 and C22:6n3 were highest in T2 (P < 0.05); T4 had the highest C18:3n6 (P < 0.05), while C20:2 was highest in T5 (P < 0.05). The P/S ratio on D1 was highest in T4; while n-6/n-3 was highest in T1; and n-3 was highest in T3. On D8, the n-3 was highest in T1 (P < 0.05). Results of the current study show that supplementation of M. oleifera leaf at additive levels of up to 5 percent of the bird’s DMI does have the potential to influence the bird performance without any detrimental effects on nutrient utilization, bird health, bone strength and/or meat quality, which can be concluded that MOLM enhanced the bird’s genetic potential for optimal productivity.

Protein efficiency ratio (PER) and energy utilization efficiency (EEU) ratios were statistically significant among treatments (P < 0.05). However, dietary treatments had no effect (P > 0.05) on the weights of the heart, liver, spleen, or the gizzard, although the bursa for T2 birds was the lightest (P < 0.05); while gizzard erosion score was highest in T2 birds. All of the nutrients measured, except for fat, had negative intercepts that were significantly different (P < 0.05) from zero, indicating the presence of endogenous fecal losses. Tibiae length (TL) was highest in T2. The dried defatted weight (DW) was heaviest (P < 0.05) for T3 (11.20 ± 0.347) and T5 (11.08 ± 0.328). A positive correlation (r = 0.667; P < 0.01) between TW and DW was observed. There were no dietary effects on bone breaking strength (BBS), but T1 tibiae had highest resistance to breaking force (T1 > T4 > T3 > T2 > T5). Calcium was highest (P < 0.05) in T1; and lowest inT2 and T5. Phosphorus levels were lowest (P < 0.05) in T1; and highest (P < 0.05) in T5 compared. The highest Ca: P ratio was obtained in T4 (P < 0.05); while the ash percent was highest (P < 0.05) in T1. Drip loss increased as L* values increased; and a negative correlation was observed between L* and pH. On D1, C18: 0 and C22 in T2, while C15:0 was highest in T4. On D1, C20:2, C20:3n6 and C22:6n3 were highest in T2 (P < 0.05); T4 had the highest C18:3n6 (P < 0.05), while C20:2 was highest in T5 (P < 0.05). The P/S ratio on D1 was highest in T4; while n-6/n-3 was highest in T1; and n-3 was highest in T3. On D8, the n-3 was highest in T1 (P < 0.05). Results of the current study show that supplementation of M. oleifera leaf at additive levels of up to 5 percent of the bird’s DMI does have the potential to influence the bird performance without any detrimental effects on nutrient utilization, bird health, bone strength and/or meat quality, which can be concluded that MOLM enhanced the bird’s genetic potential for optimal productivity.

Data were collected from 288 households to investigate farmer perceptions, effects on pig production and handling of disease outbreaks such as classical swine fever (CSF) in market- and subsistenceoriented production systems. The utilisation of local pigs in these market- and subsistenceoriented production systems in improving people‟s welfare was evaluated. Climate change was identified by farmers in these production systems as a major constraint to pig production hence an experiment was carried out in the hottest season to determine diurnal heat-related physiological and behavioural responses in Large White (LW) and South African local pigs. The same genotypes were used to determine effects of diurnal heat-related stress on their growth performance. Choice experiment was done to determine farmer preferences for local pig traits and implicit prices for these traits in CSF-affected and unaffected areas that were under subsistence- and market-oriented production systems. In this experiment, the importance of heat tolerance was assessed relative to other productive and climate change adaptation traits. Significantly more pigs were culled in the CSF-affected areas that were market-oriented (8.0 ± 1.76) than subsistence-oriented (4.1 ± 1.00) production system. The risk of parasites and disease challenges was high in subsistence-oriented production system and coastal areas. In both production systems, CSF was perceived as destructive since the culling of pigs affected pork availability and income generation. The high risk of disease outbreaks and threat of climate change caused farmers in subsistence-oriented production system to select local pigs for their adaptive traits while those in the market-oriented production system focused on productive imported pigs. Farmers (83 %) indicated that they wanted pig genotypes that were adapted to climate change effects such as hot conditions. Local pigs were found to have superior heat tolerance over LW pigs (P < 0.05) in terms of lower heart rate and skin surface temperature. Frequency per day and duration for behavioural heat loss activities such as wallowing, sleeping in a prostrate posture and sprawling in slurry were also lower (P < 0.05) for local than LW pigs. The superiority of heat tolerance of local over LW pigs was further confirmed by their uncompromised growth performance under high diurnal temperatures. The Pearson‟s product moment correlation coefficient between temperature and feed conversion ratio for LW pigs was strongly positive (r = 0.50; P < 0.001) unlike the weak and positive correlation for local pigs (r = 0.20; P < 0.05). There was a quadratic relationship between temperature and average daily gain (ADG) for both pig genotypes. The regression coefficients for ADG were higher (P < 0.001) for LW than local pigs. It was concluded that at high ambient temperatures, performance of local pigs was less compromised than for LW pigs. Although local pigs were found to be heat tolerant, results of choice experiment showed that this trait was not selected for relative to other traits. Keeping pigs that required bought-in feeds, fell sick often and produced low pork quality (eating quality based on farmer perceptions) negatively affected farmers‟ livelihoods more in subsistence- than market-oriented production system. Farmers in market-oriented production system derived more benefit from productive traits such as heavier slaughter weights and large litter size than subsistence-oriented farmers. Under the subsistence-oriented production system, farmers in CSF-affected areas placed high prices on adaptive traits than the unaffected areas. Subsistence-oriented farmers who were affected by CSF wanted a total compensation price of R10 944.00 (USD1563.43) for keeping a pig genotype with unfavourable traits when compared to R4235.00 (USD605.00) for their CSF-unaffected counterparts. Implicit prices for traits could not be determined for market-oriented production system. It was concluded that farmers in CSFaffected areas placed high economic values on pig traits than farmers from the CSF-unaffected areas. The findings suggest that adapted local pigs can be promoted in subsistence-oriented production systems while productive imported pigs and their crosses with local pigs can be kept in market-oriented production systems.

- Description: Information on milk production could be useful in designing strategies that would help to improve milk production in communal farming systems. This study was conducted to determine milk production and calf performance of Nguni and crossbreds under smallholder cattle production conditions. Four trials were conducted in the study. The objective of the first trial was to determine farmer perceptions on milk production and calf rearing in smallholder areas. Data were obtained from 218 smallholder farmers, using a structured questionnaire. Smallholder farmer sector is constituted by small scale commercial farmers and communal farmers. Small-scale commercial farmers in South Africa obtained farms from the government through land claims or they bought the farms. Their farming background is a communal type. Communal farmers are farmers that are sharing the same grazing land and animals are managed according to the experience of the owner. The findings in this study indicated that there were numerous constraints to milk production in smallholder areas. These included lack of technical expertise and poor veterinary support services. The farmers also indicated that calf performance was low. The second trial was conducted to determine if there were differences in calf performance, gastrointestinal parasites and nutritionally-related blood metabolites between Nguni and crossbred calves. Body weights and faecal samples were collected monthly until weaning at six months. The levels of total protein, albumin, globulins, non-esterified fatty acids (NEFA), glucose, cholesterol and minerals were determined monthly. Nguni calves had higher birth weights than crossbreds (P<0.05). Average daily gain and weaning weights of Nguni calves were greater than crossbred calves (P<0.05. Nguni calves had lower total protein at early age after birth (P<0.05). However, at weaning Nguni calves had higher total protein than crossbreds (P<0.05). Nguni calves had higher levels of glucose and NEFA concentrations than crossbred calves (P<0.05). In the third trial, milk utilisation patterns in smallholder areas of the Eastern Cape were assessed. Cattle owners (n = 130) were randomly selected in three different regions to determine milk consumption patterns, milk sales, prices and factors influencing these activities. The information was gathered using milk recording sheets, which were administered in February (early lactation) and June (late lactation) in 2009. Milk consumption per household was similar among the three districts (P>0.05). Milk was utilised as both fresh and sour. Fresh milk was utilised with tea/coffee and porridge. Excess fresh milk was utilised to feed pets (mostly cats and puppies). The puppies were fed on mostly whey, and, at times, on fresh milk. Sour milk was utilised to prepare of umvubo (a mixture of sour milk and scrambled porridge (umphokoqo) or a mixture of sour milk and bread). In some cases, excess milk was given to neighbours as a form of social investment and fame. The quality of milk from Nguni and crossbred cows was compared in the fourth trial. Milk samples were evaluated for quality in early (February), mid (April) and late (June) lactation in 2009. The essential amino acids, non-essential amino acids and fatty acids were determined. Nguni milk had higher amino acids and fatty acids concentration than crossbreds (P<0.05). Nguni milk had higher arginine levels in the early and mid lactation periods compared to crossbred cows (P<0.05). Nguni milk had higher methionine and threonine levels than crossbred cows (P<0.05). Methionine levels in Nguni were 0.15, 0.19 and 0.18 in early, mid and late lactation while crossbred had 0.05, 0.05 and 0.06 (g/100ml), respectively. There were significant interactions between lactation stage and genotype for lysine levels with Nguni milk having higher (P<0.05) lysine levels in the mid and late lactation periods. Nguni cows had higher tyrosine, glycine and proline levels than crossbred cows (P<0.05). In the early lactation, Nguni cows had higher serine levels than crossbred cows (P<0.05). In mid lactation crossbred cows had higher serine levels than Nguni cows (P<0.05). There were significant differences between genotypes on fatty acid composition. Nguni milk had higher C12:0 levels than crossbreds (P<0.05). However, milk from crossbred cows had higher C14:0 levels than that for Nguni cows (P<0.05) and also had higher levels of C16:0 and C18:0 fatty acids compared to Nguni cows. Crossbred milk had higher levels of C18n1n9t in early lactation period than Nguni and decreased as the stage of lactation progressed (P<0.05). In the early lactation, the levels of C18n1nC in Nguni milk were higher (P<0.05) than in late lactation. In the mid and late lactation, crossbred cows milk had higher C18n1nC levels than in early lactation (P<0.05). Lactation stage and genotype affected saturated fatty, monounsaturated fatty acids, cis-fatty acids and omega 3 (n-3) to omega 6 (n-6). In general, Nguni milk had higher mineral composition than crossbred milk (P<0.05). In conclusion, Nguni calves performed better than crossbred calves under communal rangelands. There is a need for crossing Nguni cows with dairy breeds in commercial dairying by smalhoder farmers as a strategy for improving both milk quality and quantity.

Excess fresh milk was utilised to feed pets (mostly cats and puppies). The puppies were fed on mostly whey, and, at times, on fresh milk. Sour milk was utilised to prepare of umvubo (a mixture of sour milk and scrambled porridge (umphokoqo) or a mixture of sour milk and bread). In some cases, excess milk was given to neighbours as a form of social investment and fame. The quality of milk from Nguni and crossbred cows was compared in the fourth trial. Milk samples were evaluated for quality in early (February), mid (April) and late (June) lactation in 2009. The essential amino acids, non-essential amino acids and fatty acids were determined. Nguni milk had higher amino acids and fatty acids concentration than crossbreds (P<0.05). Nguni milk had higher arginine levels in the early and mid lactation periods compared to crossbred cows (P<0.05). Nguni milk had higher methionine and threonine levels than crossbred cows (P<0.05). Methionine levels in Nguni were 0.15, 0.19 and 0.18 in early, mid and late lactation while crossbred had 0.05, 0.05 and 0.06 (g/100ml), respectively. There were significant interactions between lactation stage and genotype for lysine levels with Nguni milk having higher (P<0.05) lysine levels in the mid and late lactation periods. Nguni cows had higher tyrosine, glycine and proline levels than crossbred cows (P<0.05). In the early lactation, Nguni cows had higher serine levels than crossbred cows (P<0.05). In mid lactation crossbred cows had higher serine levels than Nguni cows (P<0.05). There were significant differences between genotypes on fatty acid composition. Nguni milk had higher C12:0 levels than crossbreds (P<0.05). However, milk from crossbred cows had higher C14:0 levels than that for Nguni cows (P<0.05) and also had higher levels of C16:0 and C18:0 fatty acids compared to Nguni cows. Crossbred milk had higher levels of C18n1n9t in early lactation period than Nguni and decreased as the stage of lactation progressed (P<0.05). In the early lactation, the levels of C18n1nC in Nguni milk were higher (P<0.05) than in late lactation. In the mid and late lactation, crossbred cows milk had higher C18n1nC levels than in early lactation (P<0.05). Lactation stage and genotype affected saturated fatty, monounsaturated fatty acids, cis-fatty acids and omega 3 (n-3) to omega 6 (n-6). In general, Nguni milk had higher mineral composition than crossbred milk (P<0.05). In conclusion, Nguni calves performed better than crossbred calves under communal rangelands. There is a need for crossing Nguni cows with dairy breeds in commercial dairying by smalhoder farmers as a strategy for improving both milk quality and quantity.

- Description: Goats significantly contribute towards the subsistence, economic and social livelihoods of many resource-poor farmers in developing countries, the majority of which own goats. There, however, is dearth of information on communal goat production potential and roles to the rural populace. The broad objective of the study was to evaluate production practices, constraints, production efficiency and to determine nutritional and health status of goats raised by resource-poor communal farmers in the Eastern Cape Province of South Africa. Roles and management systems of goats, goat flock dynamics and, prevalence and loads of gastrointestinal infections and the nutritional status of goats in the study areas were determined. The relationships among body weight, body condition score, faecal egg counts and, haematological and biochemical profiles were also determined. Mean goat flock sizes per household were similar between the two districts studied; Amatole (14.0 ± 0.31) and Alfred Nzo (14.1 ± 1.42). Seventy-nine percent of households in Amatole and 78% in Alfred Nzo kept goats for ceremonies, such as the initiation ceremonies. Goat houses in the two districts were poorly constructed. Thirty two percent of farmers in Alfred Nzo district and 27% in Amatole district reported low buck to doe ratios, suggesting that inbreeding might have been reducing productivity of their flocks. Kid mortality had two major peaks; in May (21%) and in September (21%). Goat production potential (GPP), the proportion of mature and growing goats to the total flock size, was affected by gender of owner of goats. Goats owned by female had a significantly lower GPP value of 0.63 ± 0.015 than goats owned by male farmers (0.70 ± 0.010). Month also significantly affected GPP with the highest (P < 0.05) GPP recorded in May, June and July and the lowest in March and April. Village affected GPP with values for Nkosana and Qawukeni being significantly higher than for Mankone. Goat production potential was also higher (P < 0.05) in small flocks (0.04 ± 0.008) than in large flocks (0.02 ± 0.008). Goat production efficiency (GPE) ranged from 0.11 ± 0.193 in April to 1.55 ± 0.193 in December. The most prevalent gastrointestinal eggs were the strongyle egg type (68.4 ± 8.49 in Qawukeni and 96.1 ± 12.01 in Nkosana) followed by coccidia (53.3 ± 8.76 in Qawukeni and 68.8 ± 8.00 in Mankone). The other identified nematodes were Strongyloides and Trichostrongylus egg types. The trematodes observed were Fasciola and Paramphistomum species. High loads of strongyle eggs were observed in the hot-wet season and the post-rainy season, whilst the other egg types showed a peak in the hot-wet season only. For most of the gastrointestinal parasite eggs, prevalence was higher (P < 0.05) in the sour rangeland compared to the sweet rangeland. Higher (P < 0.05) levels of total protein (TP), globulin, aspartate aminotransferase (AST) and creatinine kinase (CK) levels were recorded in the wet than in the dry season. Body condition scores were positively correlated (P < 0.05) to albumin, body weight and packed cell volume. However, body condition scores were negatively correlated to TP, glucose, alanine transaminase (ALT) and AST. Strongyle egg loads were positively correlated to FAMACHA scores, packed cell volume, body weight and body condition score. The observed high globulin levels suggested a chronic health challenge. Thus, it is fundamental to devise affordable interventions for the control of gastrointestinal parasites in communal goats leading to improved goat productivity and hence rural livelihood

- Description: The objective of the current study was to compare tick loads, growth, carcass characteristics and meat quality of Nguni, Bonsmara and Angus steers raised on natural pasture. A total of 30, 7-month old steers each of Bonsmara and Angus, and 40 Nguni steers were kept at the University of Fort Hare Farm till slaughter at 18 months. Monthly weights of the steers were recorded. Carcasses were electrically stimulated. The m. longissimus thoracis et lumborum was sampled for the measurement of meat colour, pH, drip loss, sarcomere length (SL), water holding capacity (WHC), cooking losses, myofibrillar fragmentation length (MFL), Warner Bratzler shear force (WBSF), fatty acid profiles and sensory characteristics of the steers. Urine samples were collected at the slaughter line for the determination of stress hormone concentrations. The Nguni had the lowest tick load (P < 0.05) while the Angus had the highest tick load (P < 0.05). Tick load did not affect the growth rate and carcass characteristics of the steers. Bonsmara and Angus steers had higher (P < 0.05) carcass weight and dressing percentage than the Nguni steers. Meat quality characteristics were similar (P > 0.05) among all the breeds, except that Nguni meat was darker (L*) (P < 0.05) than meat from the other two breeds. The Bonsmara had the highest (P > 0.05) concentrations while the Nguni had the lowest (P > 0.05) concentrations of stress hormones. There were significant (P < 0.05) correlations between WB values of meat aged for two and 21 days in Nguni and Bonsmara, but not in Angus. The correlations among stress responsiveness hormones and meat quality were breed-dependent. Except monounsaturated fatty acids (MUFA) and the n-6/n-3 ratio, fatty acid profiles among the breeds were similar (P > 0.05). Cholesterol levels among the breeds were similar (P > 0.05). The Nguni had the best (P < 0.05) sensory characteristics, such as flavour and tenderness. It can be concluded that while the Nguni is a small framed breed, its meat quality is similar to that of Bonsmara and Angus and has the best meat taste when raised on natural pasture.
